Friday Dinner


What do you do with a giant puff-ball mushroom the size of a softball?  Make dinner with it of course!  
Many people probably don't even know that those brown little ugly golf ball looking things that we all used to stomp on as kids because the spewed that brownish-green little dust cloud actually started out as an edible mushroom. That's right, when found early enough (still white like a mushroom) they can be chopped up and used in many different dishes. If the inside is turning a brownish color then you know it's past it's prime, don't eat it. In fact, before eating anything that you find in the outdoors make sure you identify it by book or someone who is knowledgeable about these foods. Yes, this is my disclaimer so that I don't get blamed for someone's explosive diarrhea or worse. There are a lot of things right in our own backyards that  we can eat everyday, the key is knowing what they are, I encourage you to get a book, stop reading all sorts of crazy blogs (except this one) and read said book. You'll be surprised what you can learn. 
So what I made with this puff-ball was, puff-ball crepes stuffed with crab and asparagus topped with a fried egg and a puff-ball parm sandwich. The crepes were actually slices of the mushroom that I sautéed and wrapped around the crab concoction. The parm was a thicker slice of the shroom that I breaded and pan fried to make the "cutlet" and then assembled the parm sandwich with the usual accoutrement. 
There ya go, now go out and see what you can find…and make into a delicious and nutritious meal. Bon appetite!

To Meat, or Not To Meat?

That is my question!

What is everyone's take on meat?  How often do you have it?  Do you stick to certain types of meat?  Do you stay away from certain types?  Do you feel a difference physically if you eat more or less meat?
